Can I record multiple monitors with Sirvez?

Sirvez captures one desktop display per recording session.

When you start a Desktop Recording, you choose which screen to capture from the browser's screen-picker dialog. If you have a multi-monitor setup, select the display you want — only that screen will be recorded. Switching between monitors mid-session is not supported; you would need to stop and start a new recording to capture a different display.
